Veggie Delight Platter

Have you ever been invited to an event or potluck and not sure what to bring? Or, maybe you have shown up to an event and you can tell the host is behind in schedule but the vibe is hungry? Save the day with this Veggie Delight Platter. This is a go-to of mine and though it’s simple, I am always tasked with bringing it to every single event. It’s great for everyone – including kids! The best part of this platter is that you can add to it to include cauliflower, cheeses and fruit. Think of it as a charcuterie board but with garden-fresh flair.

Ingredients:

1 oversized plate
16 ounces of sour cream
1 – 1 ounce packet of Ranch Seasoning
1 – 10 ounce container of hummus ( plain or flavor of your choice)
1 large green bell pepper
1 large red bell pepper
1 large orange bell pepper1 large yellow bell pepper
1 package of cherry tomatoes
1 – 12 ounce package of baby carrots
2 stalks of celery
1 – 2 heads of broccoli
1 – 2 english cucumbers

Directions:

For Veggies:
1. Deseed, wash and slice all of your bell peppers
2. Wash and slice your celery
3. Wash and plate your baby carrots
4. Wash and slice your english cucumber
5. Wash and trim your head of broccoli (be sure to leave enough stem for easy grabbing)
6. Wash and plate your cherry tomatoes

For Ranch Dip:
1. Scoop the entire 16 ounces of sour cream into a bowl
2. Add the entire packet of ranch dip into the sour cream
3. Mix thoroughly and make sure you scrap the sides for any seasoning left behind
4. Add back into the sour cream container or add to a serving bowl of your choice Keep refrigerated until ready to serve

Other: Feel free to purchase pre-made hummus or you can make your own.
– Plate your vegetables by type and cover with a lid or plastic wrap.
– Don’t forget serving spoons and tongs! I like to bring extra vegetables to add to the platter as it gets low.It’s a great dish to munch on throughout the event.
– You can prepare this the night prior to any event to save yourself time the day of.
