This cobbler has a wonderful balance of sweet blackberries and a crispy, buttery topping that isn’t too thick. Enjoy!
Ingredients:
4 cups fresh blackberries
1 cup granulated sugar (divided)
1 tablespoon lemon juice1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, melted
1/2 cup milk
1 teaspoon vanilla extract
Directions:
1. Preheat your oven to 375°F (190°C).
In a bowl, combine the blackberries, 1/2 cup of the sugar, and lemon juice. Stir
gently and set aside.
2. In a medium bowl, whisk together the flour, the remaining 1/2 cup of sugar, baking
powder, and salt.
Stir in the melted butter, milk, and vanilla extract until just combined. The batter will
be thick.
3. Pour the blackberry mixture into a greased 9×9-inch baking dish.
Drop the batter by spoonfuls over the blackberries, spreading it out as evenly as
possible. It’s okay if some berries are not completely covered.
4. Bake in the preheated oven for about 40-45 minutes, or until the top is golden
brown and crispy.
5. Allow the cobbler to cool for a few minutes before serving. Enjoy it warm with a
scoop of vanilla ice cream or a dollop of whipped cream.
