Looking for a new addition to your annual holiday cookies? Cookie Butter cookies are sweet, creamy, and easy to make.
Ingredients:
2 large eggs
1 tsp vanilla extract
¾ c granulated sugar
¾ c packed brown sugar
1 stick unsalted butter
½ c vegetable spread (such as Country Crock) OR a 2nd stick of butter
½ c cream cookie butter
1 tsp baking powder
1 tsp baking soda
2 cups white or semi-sweet chocolate chips (or 1 c. each)
10 Biscoff cookies, crushed Melted white chocolate wafers for drizzling (optional)
Instructions:
Preheat oven to 350 degrees.
Line two baking sheets with parchment paper.
Using a stand or hand mixer, mix together eggs, vanilla, sugars, and butters.
Gradually add in the dry ingredients.
Scrape down the sides as needed.
Spoon dough into 8-10 balls and place on lined baking sheets.
Bake 8-10 minutes.
These cookies will be very soft, so let them rest cool on the cookie sheets at least 15 minutes before transferring to a wire cooling rack.
Drizzle with melted white chocolate wafers and/or pieces of Biscoff cookies, if desired.
