I love pretty much all things Fall. There are so many wonderful recipes out there that capture the flavor of the season. Here are a few recipes that my family particularly enjoys. I hope yours will too!
Apple Pie Crescent Rolls
My eldest son literally eats an apple a day, and my husband would probably choose apple pie over birthday cake. So a couple of years ago, I knew I had to find a quick apple dessert that gave the labor-intense pie a run for its money. This 6 ingredient treat takes less than 30 minutes to prep and bake. I suggest serving it warm with some vanilla ice cream to really wow the apple lovers in your life.
Pumpkin Muffins
Originally a Weight Watchers recipe, I have adapted this one based on reviews so it’s not strictly for calorie counters. The spice cake mix and canned pumpkin will make your house smell like Thanksgiving. I love these for breakfast or an after school snack. My kids adore them, and I feel slightly less guilty because they’re eating a vegetable. (Note: The cake mix comes in 15.25 ounces, so you really only need about 3/4 of a 15 ounce can of pure pumpkin. I always add 1 egg, reduce the water to 1/2 cup, and add 1 tsp of Pumpkin Pie Spice to really take these up a notch!)
Creamy Slow Cooker White Chicken Chili
What’s Fall without chili? Or without something simmering all day in your crockpot? This white chicken chili is so yummy, and you can adapt the spices to suit your family’s tastes. My husband and I like our chili spicier than our boys do, so we add extra cayenne pepper after serving. It’s great with cornbread or tortilla chips on the side. Don’t forget the sour cream and shredded cheese on top, too!
Cauliflower Gratin
Like broccoli, cauliflower is a Fall or cool-season, vegetable. I fell in love with it when I saw Ina Garten make this on an episode of Barefoot Contessa. Give this a try, and I guarantee even your pickiest eater might enjoy it. If you can’t find Gruyere cheese or it’s a little out of your budget, shredded Swiss will do the job. This is a delicious weeknight side or can be added to your menu for the holidays.
Harvest Bowls
If you’re like me and you want to have a little bit of everything in one bowl, then a harvest bowl is for you! Check out these recipes or get inspired to make your own concoction of Fall favorites. Quinoa or wild rice makes a great base. You can go vegetarian with a mix of roasted veggies, or add chicken for meat lovers. Harvest bowls are also a great way to use up any leftovers you have sitting in the fridge.
