Pumpkin Spice Protein Balls

This Retiree is keeping up with the Pumpkin Spice Craze. With a little extra protein added in these are GREAT for after a run/walk, bike or hike. Read all the way to the bottom as I have included a little added bonus at the end. ENJOY!

Ingredients:

12 large Medjool dates pitted

1 1/2 C quick cooked rolled oats

1/2 C pumpkin puree

1/4 C almond butter

1/4 C maple syrup

1TBLSP chia/flax seeds (I have a premixed jar that has both seeds in it)

1TSP vanilla extract

1 dash cinnamon and salt

1 scoop pumpkin spice bone broth protein

 

Instructions:

Add you dates in a food process and pulse until they form a ball.

Next add your remaining ingredients and again pulse until combined.

Use a 1 tbsp scoop or 2 spoons to form a ball and place on a cookie sheet lined with parchment paper.

Pop in the freezer for about 30 minutes until firm.

Store in the fridge in an airtight container. These will be good for about a week.

Total Time: 15-20 Minutes

These too can be kept in the freezer in a freeze safe bag or container. I ordered my Pumpkin Spice Bone Broth Protein from Ancient Nutrition. You can substitute vanilla powdered protein but add 1 tbsp pumpkin spice seasoning and omit the vanilla extract.

What else can you add to these?

Chocolate chips, pecans or walnuts, rolled in pepitas or chopped almonds,

maybe even sprinkle with a little more cinnamon before you eat them.

What do you do with the left over can of pumpkin puree?

You place it into ice cube trays, freeze it over night and give one cube to your dog as an extra special treat. They will LOVE it.

Hey I'm Jenn, NYer turned OKie after my husbands 30 year ARMY career. We have four pretty amazing adult kids, two of which are active duty soldiers, so yes we are "empty nesters" But that didn't last, we bought 40 acres called The Roost and a few chickens to fill that void. Though my career was Physical Therapy many years ago, I chose to stay at home with our kids during my husband's active duty career with lots of volunteering added to my resume. My goal is to "keep moving" so staying active as long as I can through running, yoga, biking is my go to, but I do enjoy a frothy cup of black coffee, a glass of wine and chips and salsa. Also to help other empty nester moms out there who have kids that are active duty. It is a different ball game when your kids are active and deploying, but we can get through it together.
