How much do I love a Costco rotisserie chicken? Oh, let me count the ways.
How about seven ways, one for every day of the week?
Maybe it’s because we’ve been stationed in Germany for so long already, but I officially and deeply miss those chickens. I miss the convenience of picking one up. I miss how delicious they are, and I realllllly miss their cheap price point.
If you’re stuck in a dinner rut, here are 7 different ways to use that mouthwatering Costco rotisserie chicken:
1. Plain…Just as Costco Intended
Thankfully, the chicken is good to go (once it cools a bit) and plenty enough to feed the family. And if you need a second one, it’s not like it’ll break the bank. Pick up a pre-made salad and some veggies, and you’ve got yourself an easy meal.
2. White Bean Chicken Chili
Hot dang, this recipe is delicious. I used to get two Costco rotisserie chickens—we’d eat one for dinner just as it is, and then I’d strip the meat off the second one and make this White Bean Chicken Chili the next night. Get the recipe here.
3. Tacos, Tostadas, Nachos, Salads, and Burritos (oh my)
I’m lumping all of these ideas into one (so you’re really getting 10 meal ideas from this post!), but these are such easy, go-to meals that I can’t help myself. Here’s what I love most about this chicken: it’s already so flavored that you don’t need to do anything to it. Literally plop down a corn/flour tortilla or some tortilla chips and add some shredded chicken to it. Top with some cheese and salsa (and roll up if making a burrito), and BAM. Taco Tuesday made ridiculously easy.
4. Green Chile Chicken Enchiladas
Get. In. My. BELLY. Using the rotisserie chicken in this meal brings out so much flavor, and it’s easy to put together and freeze for another night. Get the recipe here.
5. Chicken Salad
Sometimes you can luck out and find chicken salad pre-made with the Costco rotisserie chicken in the deli area. It was like hitting the jackpot on those days. But when they don’t have it available, I like to whip up my own chicken salad with the leftover breast meat. Get the recipe here.

7. Jamaican Jerk Chicken Pizza
This is so good, and it took me the longest time to try it. Here’s what you do: mix a couple tablespoons of this Jamaican jerk seasoning in with about two cups of your shredded Costco rotisserie chicken. Slice up some red onions and bell peppers, and put it all on top of a lightly oiled, pre-made pizza dough. Sprinkle some cheese on top and bake.
