Easy Cranberry Relish

I never knew cranberries could be so sweet and delicious until my neighbor gifted me a jar of her holiday Cranberry relish. I was skeptical, but she told me she had never had a negative review. I took one bite and I was sold! This simple, easy and inexpensive side dish is the perfect complement to various meats, crackers, yogurt and the perfect topping on vanilla ice cream. The key to making this dish so tasty is finding exactly how you like it. I recommend using the entire bag of cranberries, but then tweak the rest of the ingredients to your taste. Start with less then add more! Just as I received this as a gift, you can spoon the relish into jars, bring it as a hostess gift or have it on hand to pull out for someone passing through. Ingredients:

1. 1 12 oz bag of Cranberries
2. 1 Orange
3. 3/4 – 1 C Sugar
4. 1/2 – 1 T Cinnamon (optional)

Directions:

1. Rinse and drain cranberries
2. Slice orange into 8 wedges (Peel included)
3. Start with adding 5-8 orange wedges in a food processor then add remaining ingredients.
4. Adjust oranges slices, sugar and cinnamon to taste.
5. Mix until well combined, but still a little chunky.
6. Spread on meats, sandwiches, crackers, add to yogurt and ice cream or just grab a spoon and enjoy! ***Best served chilled.***
