March 17th is all about celebrating Irish Pride, and it’s a great way to kick off spring.  There are so many wonderful St. Patrick’s Day traditions, but our family loves to celebrate with food.

It isn’t St. Patrick’s Day without an amazingly easy instant pot meal comprised of meat and potatoes!  Enjoy this easy-to-make and even easier to eat Instant Pot Shepherd’s Pie!

Ingredients:

2.5 lbs of Potatoes (your variety of choice)

1.5 lbs of ground beef or turkey

Most of the ingredients for Instant Pot Shepherd's Pie

1 packet of onion soup mix

2 tablespoons of butter

1 bag of frozen mixed vegetables

2 cups of water

1 cup of sour cream

1/4 cup of milk (or more)

1 packet of brown gravy

Cheddar Cheese (measure with your heart)

 

Instructions:

    1. Place your Instant Pot on saute.
    2. Add ground beef and onion packet.  Cook until slightly brown and crumbles.
    3. Add water and veggies.  Stir to combine.
    4. Dice potatoes.
    5. Place Potatoes in your veggie steamer on top.
    6. Place your Pot on Manual High pressure for 12 minutes.
    7. Do a quick release.
    8. Remove Potatoes in a separate bowl. Mash potatoes with butter and milk until creamy and smooth.
    9. Place pot on saute and pour in the packet of gravy mix and stir until the gravy starts to thicken.
    10. Turn off the Instant Pot and stir in the sour cream.
    11. Pour mixture into a baking pan and top with mashed potatoes.
    12. Top the potatoes with cheese and place under the broiler for 2 minutes or until the cheese is melted.

 

Pair this meal with some St. Patrick’s Day Crafts or more St. Patrick’s Day Crafts, and it’s bound to create some wonderful family memories!  Just mark it down, because this recipe is about to become a family favorite all year round.
