Jell-O Poke Cake

This is the perfect summer dessert, and has always been one of my favorites. For years, my Grandma has made it almost every time I visit, so it’ll always hold a special place in my heart.

Ingredients:

    • Just a few ingredients needed to make this delicious cake
  • 1 box white cake mix
  • Water, vegetable oil and eggs called for on cake mix box
  • 1 cup boiling water
  • 1 box (4-serving size) Jell-O (can use any flavor, I used cherry this time, but usually reach for strawberry!)
  • 1 8 oz container of cool whip (for topping)

Instructions:

Preheat oven to 350 degrees.
Grease the bottom of a 9×13″ pan.
Prepare the cake mix according to package instructions, and pour into prepared pan.
Place the pan on the middle rack of the oven.
Bake as directed on the cake mix box, or until a toothpick inserted near the center comes out clean.

Ready for the Jell-O

Cool the cake in the pan on a cooling rack for at least 20 minutes.
While the cake is cooling, place the gelatin in a medium bowl and pour 1 cup boiling water over it. Stir until gelatin is fully dissolved.
After the cake has cooled, poke holes every inch using the tines of a fork, poking halfway into the cake.
Carefully pour the gelatin mix evenly over the top of the cake.


Let the cake cool completely on a cooling rack, about 1 hour.
Cut the cake into desired amount of pieces, and top each slice with a dollop of cool whip to serve.
Store cake covered in the refrigerator.

Cook Time:23-28 minutes

Total Time: 2 hours
