Pumpkin Bars

More like pumpkin cake than pumpkin bars, these thick, moist bars are the perfect easy fall dessert!

Ingredients:

4 eggs
1 2/3 cups white sugar
1 cup vegetable oil 1
(15 oz) can pumpkin or 2 cups fresh pumpkin
2 cups flour
2 tsp. baking powder
1 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt

frosting ingredients

FROSTING:
3 oz. cream cheese, soft
1/2 cup butter, soft
1 tsp. vanilla extract
2 cups powdered sugar

Directions:

1. Preheat oven to 350 degrees.
2. In a bowl, mix the eggs, sugar, oil and pumpkin until light and fluffy.
3. In a second bowl, mix the flour, baking powder, baking soda, cinnamon and salt.
4. Stir the two mixtures together until well combined.
5. Spread batter into ungreased 9×13″ pan.
6. Bake 30-35 minutes.
7. Cool before frosting.

FOR THE FROSTING
1. Cream together butter and cream cheese.
2. Add vanilla and powdered sugar.
3. Spread evenly on cool bars.

Notes:

Servings: 15 generous pieces or 20 regular size pieces
Prep time: 20 minutes
Cook time: 30-35 minutes
Total time: 50-60 minutes

Abigail has been married to her college sweetheart, an active-duty Army soldier, for 3 years. They currently are stationed in upstate New York with their 1-year-old son. Abigail grew up in Nebraska (ironically enough for this ocean girl at heart, NE is the only triple land-locked state), but since their marriage, has lived in Arizona, Virginia, and now New York.
