Perfect for busy school mornings, this make-ahead breakfast is quick to prep, keeps you full, and is easy to customize. Whether you’re fueling your own day or prepping for your kids, this recipe makes mornings easier without sacrificing nutrition.

Ingredients:

½ cup old fashioned oats

Ingredients can be found at your local commissary!

½ cup Fage Greek yogurt
½ cup milk (any kind — dairy or non-dairy)
¼ cup Libby’s 100% pumpkin purée
1 tsp pumpkin pie spice
½ tsp cinnamon (or just measure with your heart)
1 tsp vanilla extract or vanilla bean paste (optional)
1–2 tbsp maple syrup or sweetener of choice (adjust to taste)
Optional toppings: nut butter, granola, chocolate chips, chopped nuts, or a dollop of whipped cream

Instructions:

1. In a jar or container, combine oats, yogurt, milk, pumpkin purée, spices, vanilla, and sweetener.
2. Stir well until all ingredients are evenly mixed.
3. Cover and refrigerate overnight (or at least 4–6 hours).
4. In the morning, stir again and top with desired toppings.
5. Enjoy cold or warm it up for 30–60 seconds in the microwave.

Servings: 1

Prep Time: 5 minutes

Cook Time: N/A unless you are heating in the morning in the microwave – 30-60 seconds

Use your preferred milk. Fage Greek yogurt makes this high in protein, but feel free to substitute with any yogurt you like. (Or make your own!) Adjust sweetener to taste (maple syrup, honey, agave, or even a sprinkle of brown sugar.) If you’re looking for a thicker texture, you can add 1 tbsp chia seeds or reduce milk slightly. Add-ins like chopped pecans, pumpkin seeds, raisins, or granola make great mix-ins or toppings.

This will store in the fridge for up to 3 days, making it perfect for batch prepping a few jars ahead of time!
