Blueberry Oat Cottage Cheese Breakfast Bake

Have you jumped on the protein and fiber wagon?

Well, this quick and easy Blueberry Oat Cottage Cheese Breakfast Bake is sure to be on the “I have to make” list.

Ingredients

1 1/2 C cottage cheese (I used 4% milk fat; I’m sure you could use low-fat)
2 eggs
1/4 c milk of choice (I used dairy, but this could be substituted with milk of choice)
1 tsp vanilla extract
1/2 tsp cinnamon
Pinch of salt
1 scoop of Vanilla cinnamon protein powder (non-flavored protein powder or plain vanilla)
1/4 c oat bran,
2 tbsp maple syrup ( honey can be substituted )
1 1/2 c washed, dried blueberries ( you could try frozen and thawed)

2-4 Ramekins lightly sprayed with cooking spray. (Depending on the size of ramekins will be how much this will make.)
1 baking sheet

Instructions

  1. Preheat oven to 350 degrees.
  2. Blend the cottage cheese, eggs, milk, maple syrup, vanilla, protein powder, oat bran, cinnamon, and salt until smooth.
  3. Add a few blueberries to the bottom of each ramekin.
  4. Pour your cottage cheese mixture over the blueberries.
  5. Add more blueberries and oat bran on top.
  6. Place each ramekin on the baking sheet and pop in the oven.
  7. Bake ~25-30 minutes (depending on the size of the ramekins).

You will know when they are done when the center is set, and the tops will be golden brown and puffed up a bit!

Let them cool/rest for 5-10 minutes.

Servings: 2-4 servings; depending on the size of the ramekins.
Prep time: 5-8 minutes
Cook time: ~25-30 minutes; depending on the size of ramekins will be how much this will make.
Total time: ~30-35 minutes

Notes: These can be served warm or cooled. You can also add a bit more protein on top with Greek yogurt, walnuts, or almonds. Of course, you could just add more blueberries and a drizzle of maple syrup!

We have four pretty amazing adult kids, two of which are active duty soldiers, so yes we are "empty nesters" But that didn't last, we bought 40 acres called The Roost and a few chickens to fill that void.
