Ingredients
1 cup mixed berries (fresh or frozen)
1/2 to 1 cup white sugar (adjust based on desired sweetness)
1 cup water
1–2 tsp vanilla extract (or vanilla bean paste)
Instructions
1. Add the mixed berries, water, and sugar to a saucepan.
2. Bring the mixture to a boil over medium-high heat.
3. Reduce heat and let it simmer, allowing the berries to break down.
4. Remove from heat once the berries are soft and the mixture has slightly thickened.
5. Stir in the vanilla extract.
6. Strain the syrup into a container, pressing and mashing the berries to release as much liquid as possible.
7. Let cool before using or storing.

Note: Frozen berries work great here and make this recipe easy to keep on hand year-round. Adjust the sugar depending on how sweet your berries are or your personal preference. Store in an airtight container in the fridge for up to 2 weeks. Don’t toss the leftover berries because you can use them for smoothies or for another recipe that’s going to follow this one!
