Nana’s Quick Coffee Cake

This family recipe comes from my grandmother and dates back to the depression. My grandmother could have all the ingredients on hand and quickly make it when someone came over for a visit.

Ingredients:

Coffee cake batter:
1 cup Crisco
1 ½ cups sugar
1 teaspoon salt
3 cups flour
3 teaspoons baking powder
1 ½ cups evaporated milk – you can actually use any type of milk. It changes the texture slightly, but not the taste. You and your friends will never know the difference!

Topping:
⅔ cup sugar
⅓ cup flour
3 teaspoons cinnamon
¼ cup Crisco

Directions:

1. Grease two 9″ round cake pans. You can use two 8″ square pans instead.
2. Mix coffee cake batter ingredients and pour into the greased pans.
3. Mix topping ingredients together. The topping should be crumbly.
4. Spread topping mixture over cakes.
5. Bake at 350 for 30-45 minutes or until done.

Servings:16-24 depending on how large the serving
Prep time: 10-15 minutes
Cook time: 30-45 minutes
Total time: 40-60 minutes
